Cooking lesson: how to fry eggplants


This is a video by Letizia, owner of Alla Madonna del Piatto, a lovely country inn and cooking school in Umbria, near Assisi, Italy. Eggplant (Aubergine) is an important ingredient in Italian home cooking and has to be properly prepared to obtain the best flavor and texture. Here I explain how to clean and fry eggplants.
